Abbazia is a monastery founded in 1142 by the Augustinian Order of Canons Regular and which produces a range of white and red wines from both estate vineyards at the abbey and from smaller growers near the town of Novacella in the Isarco River Valley. All of the "Authentique" range from Le Brun de Neuville comes exclusively from Bethon in the Sezanne, and is aged on the lees on a cork rather than a crown cap. This is kept for three years on the lees and is composed of 67% Chardonnay and 23% Pinot Noir, of which 17% is red wine to give the Champagne its rosé color and flavor. It benefits from 5% of oak aged wines and over 1/3 reserve wines.
