Tozai "Snow Maiden" Tokubetso Junmai Nigori Sake 720ml (Unfiltered)

This is a fairly thick and chewy "nigorizake" (cloudy sake), but it is still surprisingly dry. The aromas are bright and fresh and they show a lovely ricey and fruity combination. In the mouth, this sake has solid weight and gives the same flavors of fresh fruit and creamy fresh rice that your nose told you about. The finish has a pleasant astringency and is nicely mellow, beckoning you for another mouthful. You will rarely taste a classier nigori at this price. This maybe the ultimate food-friendly nigori.

Shirataki Uonoma Noujun Junmai Sake (720ml)

Founded in 1855 in Niigata Prefecture, Shirataki Shuzo takes advantage of the pristine water sources around Echigo Yuzawa town. These waters are the result of abundant melting winters snows that then filter through a coal vein underneath the mountain on their way into the valley where the brewery is located. This is the foundation of Shirataki's artisinal sake. Uonoma Noujun is made from rice polished to 80% of its weight, and the resulting brew is aged for two years to develop a rich, savory flavor profile.

Chiyonosono Shuzo "Shared Promise" Junmai Sake (720ml)

Until this sake came along in the 1960’s, all sake had distilled alcohol added to it due to rice shortages and war rationing. Rihaku "Dreamy Clouds" Tokubetsu Junmai Nigori Sake (Unfiltered) (720ml)

Gohyakumangoku rice milled to 59%, this unfiltered sake still has the lees in it, which gives it a cloudy appearance and a bit sweeter taste than a more modern filtered sake. Made by Rihaku Shuzo in the Shimane Prefecture, it is rich, creamy and quite long at the end.

Shimaoka Shuzo Gunma Izumi Honjozo Sake (720ml)

Polished to 60%. This is a classic, delicious Honjozo with crimini mushroom, almonds and lilac on the nose. The first sip of this sake is full of stone fruit and pure minerality followed by notes of caramel, cocoa and almond and finishes with plenty of umami. Unique to this sake, and something the brewer is now famous for in Japan, is blending sakes that are 1-3 years old, to create this incredible, harmonious sake.

Tozai "Typhoon" Futsu Sake 720ml

This is a surprisingly delicious considering the bargain basement price. Soft, crisp flavors of citrus with refreshing acidity, the Typhoon could easily be thrown into a white wine tasting as a dynamic substitute. For the price, it also makes a fantastic mixer into specialty cocktails. Try it instead of dry vermouth in a martini, or use it in a Corpse Reviver instead of Lillet. Again, for the money, it's a fantastic beginner's bottle that brings clean, authentic sake character for a bargain.
