Mas Karolina is the project of Caroline Bonville, cousin of Olivier Bonville proprietor of one of our favorite Champagne houses Franck Bonville. Caroline originally hails from Bordeaux where much of her family still resides. Looking for her own property, she settled in the village of Maury located in the Roussillon. A dark crimson color greets you, followed by an attractive floral notes of violets along with cassis and plums, mingled with earthy and leather spices. The dance between the lushness of the ripe fruit and the juicy acidity makes it quite a pleasure to drink this wine now. Very versatile in terms of pairing with food. From steaks to chilies, sausages to roast chicken. It will also complement nicely a more bold cuisine, such as Basque, Portuguese, Spanish and of course southern French.
