Undisputed in their claim to the oldest distillery in the country, Laird's incorporated in 1780 and was granted License #01 from the U.S. Department of Treasury. They've spent over 300 years producing applejack, including during prohibition (for medicinal purposes only, of course). While always sticking to tradition with their classic bottlings, they have finally jumped into the modern consumer's arena and released single barrels of full proof apple brandy. Aged 53 months, barrel 14E15#4 produced just 168 bottles of highly concentrated apple brandy that was bottled on 11/14/18. The results are truly stunning. This is the be-all, end-all for applejack cocktails. The full proof shoots the intensity of pure apple flavors through the roof and ensures it will shine in any mixed drink. Remarkably smooth, it also allows for exceptional sipping just about any way you like it.

This cask has many similar flavor components to our other Laird's single cask, but the proportions are all different, creating a familiar yet unique experience. Whereas the K&L barrel #1 was quite the spice bomb, this barrel #4 is decidedly flower-forward (while still retaining notable spicy elements in its profile). The potpourri aroma smacks of jasmine, black orchid, and lavender. Following this floral flow comes those more perfume-oriented wood notes that were present in the other cask such as sandalwood and a slight pine element. Baking spices come out next, with the apple bringing up the rear, almost shyly so. The palate opens with spice, but it quickly softens to a mix of apple and perfume. These flavors role over into a very long and tasty finish.

It's always amazing to me the stark differences between any two given single barrels. They are, for all intents and purposes, the same thing, aged in the same way, for the same amount of time in a space that might seem too small to have "micro climates" of any degree. But distilling is just as much sorcery as it is science, so I'll accept what I cannot fully understand and just get to drinking. The second barrel from Laird is higher-toned than #1, with a nose that shows a bit more of the alcohol, as well as some clean, cider aromatics. The palate though is richer, more viscous than #1, with less overall fruit and an awesomely dry finish that shows more wood influence than its companion.

I lost my mind when I tasted this. No one is more important in United States apple distillation than Laird's. We have all long loved the classic 100 proof, but this is some next-level stuff. The singular intensity of these individual barrels is unrivaled in applejack anywhere. Barrel #4 is full of sweet pure apple aroma and loads of savory apple skins on the palate. The finish lasts for days. It lingers and lingers and struts its complexity with each subsequent breath. The perfect choice for drier applejack cocktails in particular.
