The gents in Dornoch Castle have one of the most impressive operations going anywhere in the world. In the beautiful refurbished castle they operate an incredible bed and breakfast. Downstairs they have one of the world's best bars with an exceptional single cask selection. Out back is the "distillery" - basically a shipping container and an old stone shed that produces one of the best gins on the planet and a boatload of fascinating whisky. On top of all of this - the Thompson brothers also function as one of the most boutique independent bottlers in Scotland. The synergy of their operation is incredible. Every single aspect works to make the others even better. In particular, their impressive bar: ranked as No. 1 Whisky hotel, Whisky bar of the year in 2014, and 2016, Pub of the Year many years in a row, and a zillion other accolades, works to attract an impressive array of single barrel opportunties. While it's easy to focus on whisky in Scotland, this 11 year old Moneymusk cask caught our attention in a big way and we just had to have it. Pot distilled Jamaican Rum, especially at high proof and unadulterated, offers some of the very best drinking to be found. A complex and heady aroma of tropical fruit basket and sesame combined with cream and baking spices tied together with a little sea salt make for a perfect classic daiquiri. It's a very approachable pot still rum but doesn't lack for the intensity sought out by the most serious Tiki-heads.
