The incredible distillery on St Lucia is one of the rum world's best kept secret. Most real rum fans would prefer you never learned of it's wonders. Recently the distillery was sold and their new owners are the same as Rhum Clement and JM in Martinique, close friends. We were given an incredible opportunity to purchase a single cask of some of their rare experimental stocks. This outstanding barrel is the result. The spirit is a targeted 50/50 mix of molasses-based distillates made on the John Dore No.1 Pot Still (JD1) and the Coffey Column Still (C/S). The JD1 distillate was pulled from liquid distilled between January 10, 2011 and February 18, 2011 at a composite distillation alcohol strength of 83.0% ABV. The C/S distillate was pulled from liquid distilled between January 12, 2011 and January 26, 2011 at a composite distillation alcohol strength of 94.1% ABV. Both distillates were separately reduced to 63.0% ABV and then blended: 3,000 liters of JD1 at 63% ABV and 3,023 liters of C/S at 63% ABV. A batch of 6,023 liters reduced distillate blend and filled on March 12, 2011. A total of 30 barrels were filled in American white oak from this batch of liquid. This barrel was harvested in May of 2019 and bottled without chill-filtration at a roaring 108 proof. An absolutely stunning example of what powerful pot distillate and nuance column spirit do together after nearly a decade in the humid hot Caribbean climate. A benchmark barrel that will be on the radar of every rum lover.

What a treasure this fiendish bottle is. Expect a hell of a lot of rum for the price, but keep in mind how volatile and oily these tropics-aged barrels can be. Exquisite vanilla, toasted almond, fleshy coconut and a touch of baker's chocolate waft across the sticky, funky molasses of the John Dore distillate. Combined with the column still juice that provides an almost crystalline sweetness, layers of complex fruit and spice rise and fall in waves. This sip shows baked banana dipped in sticky brown sugar; the next, caramel coated nuts crumbled atop charred banana leaves with a sprinkling of acetone. Remember also that air and water are best friends for these types of brooding, impossibly deep spirits. They prop him up, remind him of his best qualities, and let the rest of the world appreciate the beauty inside.
